What does the Blue text indicate when I put it in a field? Thanks

Blue text implies that the field contains characters which are considered invalid in the field. This includes control characters and new line characters in fields where multiple lines of text are not considered to be okay.

You can remove the invalid characters by clicking in the field and from the context menu do a Yate Transformations>Remove Invalid Characters.
